Wanted: Your favorite nana recipe

I was out of town over the weekend (more on that later), but I came home to a house nearly fully in order and a stocked fridge. It was like a dream come true!

My parents, who stayed the weekend with Ben, also did a little shopping. And my dad's Costco addiction, coupled with the Thomas family forgetfulness (yes, I am a recipient of the forgetful gene) left me with:

* 9 fresh bananas they purchased from Costco Saturday
* 2 ripe bananas I purchased Thursday
* 2 over-ripe bananas I had purchased the previous Sunday
* at least a dozen frozen bananas in the freezer

So, right now at least, we have a nana situation.

We are in dire nana need.

What do I make with all these nanas? Cause my little monkey can't possibly eat them all himself.

    INGREDIENTS
    2 eggs, beaten
    1/3 cup vanilla yogurt
    1/2 cup vegetable oil
    2 cups mashed bananas
    1 1/2 cups white sugar
    1 3/4 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt


    DIRECTIONS
    Preheat oven to 325 degrees F. Spray one 9x5 inch loaf pan with non-stick spray coating.
    Blend together the eggs, yogurt, oil and bananas.
    Mix together the sugar, flour, baking soda and salt. Add to banana mixture.. Mix well.
    Pour into prepared loaf pan and bake 1 hour and 5 minutes or until a cake tester inserted in the center comes out clean.


    Then we have my hubby's fave...Banana Boats:
    A banana for each person
    Brown Sugar
    Chocolate Chips
    Mini Marshmellows

    Preheat the oven to 350
    1. Split the banana length wise, but be sure not to pierce through the bottom of the banana.
    2. Add a tsp of brown sugar to each banana.
    3. Pile with chocolate chips.
    4. Add mini marshmellows.

    Wrap in foil and place in oven at 350 for 15 min. It is pure heaven!!!

    Although personally my favorite Nana...is Banana Republic ;) haha!
